MAIN COURSE: Ep 3. Wasted Management Open Beer Can Chicken Tailgate

It’s 3 am and you have just requested a ride from whatever ride sharing app you use. No, you are not leaving the club, you’re heading to gate for the Waste Management Phoenix Open. If you want a spot inside the stadium for the loudest hole in golf, you got to earn it. This is an experience I have always wanted but I haven’t had a chance to make the trip (yet), so I’m stuck watching this from home.

That’s why this year I decided I’m going to have an at home tailgate with some Beer Can Chicken and a Backed Mac & Cheese. See the connection there? Beer can….Baked….. anyway, If I’m going to make the most of my Sunday afternoon watching the Waste Management, I need to make sure of two things. There is lots of beer and its so simple, that even I can do it when I’m 6 IPA’s deep. It was the first time I’ve ever tried making Beer Can Chicken and a Baked Mac & Cheese from Scratch.

Usually I’m a Velveeta Shells guy but I wanted something a bit more… absorbent. Lesson learned on this one. Add plenty of seasoning under the skin and instead of putting it inside the cavity, just spread that stuff on top. That will make a big difference, trust me! Best part about this tailgate is you get to drink the whole time!
